The Woodstock Inn & Resort to Host The Nordic Progressive – A Scandinavian Ski Experience

On Tuesday, February 20, The Woodstock Inn & Resort will host a Progressive Nordic Experience from 2 to 4 pm. Put on by The Nordic Center, this will be a Scandinavian ski experience featuring food and beverage stations all along the trails, each one with a Scandinavian-style offering.

Marketing Manager Jennifer Vincent says, “We created this event to highlight our amazing cross-country ski area and our culinary chefs. We thought this would be a great experience during President’s Week for guests staying with us.” 

Can non-guests participate? “Yes, the more the merrier,” she says.

What food can you anticipate enjoying at each stop? Here’s the menu for the six stations:


Station 1 

Crispy Kettle Chips
Roasted Red Beet Tartar 
Hot Cranberry Apple Cider


Station 2 

Smoked Norwegian-Style Salmon 
Grilled Flat Bread, Dill Cream Cheese, Arugula & Shaved Horseradish Vinaigrette 
Aquavit of Sparkling Water with Fruit

Station 3 

Honey-Roasted Kelly Way Garden Heirloom Squash with Dried Cranberries, Toasted Almonds, Shaved Fennel & an Apple Vinaigrette 
Infused Hot Tea or Coconut Vanilla Steamer


Station 4 

Scandinavian Seafood Kettle 
Fin & Shellfish, Golden Potatoes, and Leeks  
Gods hands or Flavored Seltzer

Station 5 

Swedish Meatballs 
Mushrooms, Pickles & Chive Sour Cream Sauce 
Mulled Red Wine or White Hot Chocolate

Station 6

Individual Norwegian Apple Spice Cake 
Winter Fruit Compote 
Swedish Coffee

The cost is $38 for the food and $20 for a trail pass. Rentals will be free with the purchase of both food and trail passes. To participate, reserve your space through The Nordic Center by calling (802) 457-6674.
